Yam Crusted Vegetable Quiche
Real men do eat quiche. Everyone should eat our version of it as well. The traditional quiche has at it’s foundation a pie crust and every crossfitter knows that pie crust is a definite no-no. Sure, we could have taken the easy route and just deleted the crust but that would have been too easy. Besides, deleting the crust removes an important flavor component. Now, we have created a hash brown crusted quiche before, but again potatoes are not really recommended either, so we turned to our old friend the yam. The yam crust is pre-baked in the oven and once cooled the egg based filling is added. We just couldn’t give you a plain egg filling so we add sautéed mushrooms and caramelized onions, and, of course, a little swiss cheese. If that wasn’t enough, we finish off the meal with three links of turkey sausage and sauteed cinnamon apples with a crisp topping, made of all things, toasted quinoa flakes!
