Pork Medallions with Rosemary and Mushrooms
Pork, the other white meat…. or so they say. Actually, as you all know, it’s a red meat but a very lean meat if you use the right cuts. Here, we’ve used pork tenderloin. We’ve lightly seasoned them then sautéed them with rosemary, mushrooms and garlic. With a small amount of dry vermouth the creation produces a delicious sauce to go with the medallions. As a side we’ve included spaghetti squash lightly tossed with butter and nutmeg then finish the meal with a yummy compote of assorted berries. $11.00
