Chicken and Pecan Salad

How about something cold instead of hot.  How about a nice chicken salad?  First we lightly season chicken breasts then grill them to perfection.  Next we dice the meat and mix it with diced celery and red onion and chopped pecans.  Then we add just enough light mayonnaise to bind it together.  This is served on top of lettuce leaves.  As sides we’ve included chunks of fresh fruit that have been tossed with mint and vegetable chips, since potato chips are a no-no.  $7.00
