Baked Egg and Tomato
What a delicious way to start your day – or even finish it off.
We stuff two tomatoes with an egg in each and then bake them together. Then we top them off with a little parmesan and herbs. This is a great combination of flavors and textures. Yummy!
The sweetness of the home-style potatoes offset the savory character of the Canadian bacon and eggs and tomatoes. The preparation is basically the same as that of traditional home fries but we changed things up a bit and substituted yams for the regular old potato.
